Savoury Granola

Savory Granola Recipe

Ingredients:

1 cup Foxnut (Makhana)
½ cup chopped Almonds
½ cup chopped Cashews
2 cups Rolled oats
¼ cup Pumpkin seeds
¼ cup Sunflower seeds
¼ cup Melon seeds
2 tbsp heaped Peanut butter
1 ½ tbsp Achari masala (Pickle Spice)
1 tsp Jaggery
¼ tsp Turmeric
Mango pickle essence
¼ cup Flax seeds

Method:

Nuts:

Add Achari masala to the almonds and cashews. Line a tray with parchment paper and roast the nuts in a preheated oven at 100°C for 8-10 minutes. Also, roast the foxnuts separately.

Oats:

Mix rolled oats, pumpkin seeds, sunflower seeds, and melon seeds together.
Mix peanut butter, Achari masala, mango pickle essence, and jaggery. Microwave for a few seconds to get a smooth mixture. Add turmeric powder and incorporate it into the granola mix.
Line a tray with parchment paper and bake the rolled oats mix in a preheated oven at 100°C for 25-30 mins.

Granola:

After foxnuts are done, coarsely crush them.
Add the nuts and flax seeds to the granola mix when cool.

Optional:

You can add Sourdough crackers/Regular crackers/Lavash.
Add Murmura, Peanuts, Chutney to make a bhel.
For a more authentic Achari flavor, you can add some mustard oil.
For those who like a bit of sweet along with the spice, you can add few dried berries / tropical fruits
